Tilapia is originally from the Nile River hence its formal name, Nile Tilapia (S.Niloticus) but most of the ones available here in the U.S. are imported from Central & South America.

Mussels Three Ways

When preparing mussels, you are only limited by your imagination. I have made mussels the typical way, with wine, garlic, tomatoes and herbs. I have also prepared mussels with a Thai-inspired green curry broth, cilantro and lime. One of my all time favourite recipes for this shellfish is a creamy concoction of pancetta bacon, a little oregano and roasted garlic. Mussels are great for a dinner party, just prepare several pounds of mussels and serve them various ways with bread, rice, noodles or pasta to sop up all the flavourful juices.
